
Grilled Corn on the Cob with Chipotle Butter
Charred corn on the cob slathered with a spicy chipotle butter for a delicious side or light lunch.
Ingredients
- 4 ears corn on the cob
- 1 stick unsalted butter
- 2 tablespoons chipotle pepper in adobo sauce
- 1 zest and juice lime
- 1 teaspoon salt
- 1 tablespoon fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon black pepper

Preheat your grill to medium-high heat (about 400°F).

In a small bowl, combine the softened butter, chipotle pepper, lime zest, lime juice, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Husk the corn on the cob, removing all silk and excess leaves. Rinse under cold water and pat dry.

Brush each ear of corn lightly with olive oil to prevent sticking.

Place the corn directly on the grill grates and close the lid. Grill for about 10-15 minutes, turning every 2-3 minutes until the corn is charred and tender.
