Grilled Chipotle Tofu Tacos with Avocado Salsa

Ingredients
- 14 oz extra-firm tofu
- 2 peppers chipotle peppers in adobo sauce
- 8 tortillas corn tortillas
- 2 whole avocado
- 2 whole lime
- 1 bunch fresh cilantro
- 2 tbsp olive oil
- 2 cloves garlic
- 1 tsp salt
- 1 tsp black pepper
- 1 medium red onion
- 1 whole jalapeño

Press the tofu: Wrap the extra-firm tofu in a clean kitchen towel and place a heavy object on top. Let it sit for 20 minutes to remove excess moisture.

Prepare the marinade: In a blender, combine 2 chipotle peppers (with some adobo sauce), 2 tablespoons of olive oil, 2 minced garlic cloves, 1 teaspoon of salt, and 1 teaspoon of black pepper. Blend until smooth.

Cut the pressed tofu into 1/2-inch thick slices and place them in a shallow dish. Pour the chipotle marinade over the tofu, ensuring each piece is well-coated. Marinate for at least 30 minutes.

While the tofu is marinating, prepare the avocado salsa: Dice 2 avocados, 1 medium red onion, and 1 jalapeño (seeds removed). In a bowl, combine the diced ingredients with the juice of 2 limes and chopped cilantro. Mix well and set aside.

Preheat a grill or grill pan over medium-high heat (about 400°F/200°C).

Grill the marinated tofu slices for 4-5 minutes on each side, or until grill marks appear and the tofu is heated through.

While the tofu is grilling, warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable.

Assemble the tacos: Place grilled tofu slices in the center of each warm corn tortilla, and top with the avocado salsa.
