
Gaeng Som - Sour Curry Soup with Fish
A sour and spicy soup with fish, vegetables, and a rich blend of Thai curry paste, perfect for a hot day.
Ingredients
- 1 pound fish
- 3 tablespoons tamarind paste
- 2 tablespoons Thai curry paste
- 4 cups vegetable broth
- 1 cup green beans
- 1 cup carrots
- 2 tablespoons lime juice
- 1 teaspoon sugar
- 1 medium onion
- 3 cloves garlic
- 1 whole red chili pepper
- 1 bunch cilantro

Prepare the ingredients: Dice the fish into bite-sized pieces, chop the onion, mince the garlic, slice the carrots into thin rounds, and trim the green beans.

In a large pot, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and minced garlic, sautéing for 3-4 minutes until fragrant and the onion is translucent.

Stir in the Thai curry paste and cook for another 2 minutes, mixing well with the onion and garlic.

Pour in the vegetable broth, then add the tamarind paste, sugar, and whole red chili pepper. Bring the mixture to a boil over high heat.

Once boiling, reduce the heat to medium and add the sliced carrots and green beans. Simmer for 5-7 minutes until the vegetables are tender.

Add the diced fish to the pot and simmer for an additional 5-6 minutes until the fish is cooked through and flakes easily.

Remove the pot from heat, then stir in the lime juice. Adjust seasoning with additional sugar or lime juice to taste.
