
Fried Rice (炒饭)
A simple and satisfying dish of stir-fried rice with vegetables and your choice of protein, perfect for a quick dinner.
Ingredients
- 4 cups cooked rice
- 1 cup peas
- 1 cup carrots
- 2 large egg
- 3 tablespoons soy sauce
- 1 cup chicken breast
- 2 stalks green onions
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper

Prepare the ingredients: Dice the chicken breast into small cubes, chop the carrots and green onions, and set aside the peas.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat (about 375°F).

Add the diced chicken to the skillet and cook for 5-7 minutes, stirring occasionally, until fully cooked and browned. Remove the chicken from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil. Add the chopped carrots and cook for 2-3 minutes until they start to soften.

Add the peas and sauté for another 2 minutes.

Push the vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them for about 1-2 minutes until fully cooked.

Add the cooked rice to the skillet, along with the cooked chicken, soy sauce, salt, and black pepper. Stir everything together and cook for an additional 3-5 minutes, allowing the rice to fry slightly.

Finally, add the chopped green onions and mix well. Cook for an additional minute.

Remove from heat and serve hot. Enjoy your homemade fried rice!
