
Fried Plantains with Avocado Salsa
Sweet fried plantains paired with a refreshing avocado salsa, perfect for a light Caribbean lunch.

- 2 large ripe plantains
- 1 cup vegetable oil
- 2 medium avocado
- 1 large lime
- 1 bunch cilantro
- 1 small red onion
- 1 teaspoon salt
- 1 medium tomato
- 1 teaspoon black pepper
- 1 small jalapeño

Peel the ripe plantains and cut them diagonally into 1-inch thick slices.

In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Carefully add the plantain slices to the hot oil in batches, ensuring not to overcrowd the skillet. Fry for about 3-4 minutes on each side or until golden brown.

Using a slotted spoon, remove the fried plantains from the oil and drain them on paper towels. Sprinkle with salt immediately.

While the plantains are frying, prepare the avocado salsa. In a bowl, dice the avocado, tomato, and red onion.

Chop the cilantro and jalapeño (remove seeds for less heat) and add to the bowl with the diced ingredients.
