Instructions

  1. 1

Peel the ripe plantains and cut them diagonally into 1-inch thick slices.

  2. 2

In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  3. 3

Carefully add the plantain slices to the hot oil in batches, ensuring not to overcrowd the skillet. Fry for about 3-4 minutes on each side or until golden brown.

  4. 4

Using a slotted spoon, remove the fried plantains from the oil and drain them on paper towels. Sprinkle with salt immediately.

  5. 5

While the plantains are frying, prepare the avocado salsa. In a bowl, dice the avocado, tomato, and red onion.

  6. 6

Chop the cilantro and jalapeño (remove seeds for less heat) and add to the bowl with the diced ingredients.

  7. 7

Squeeze the juice of the lime over the salsa mixture and season with salt and black pepper to taste. Mix gently to combine.

  8. 8

Serve the fried plantains warm, accompanied by the fresh avocado salsa on the side.
