- 1 cup all-purpose flour
- 1 cup sweet chili sauce
- 4 stalks scallions
- 1 whole lime
- 1 teaspoon black pepper

- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 4 cups vegetable oil
- 1 teaspoon cayenne pepper

In a large bowl, combine 1 cup of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, 1 teaspoon of garlic powder, and 1 teaspoon of cayenne pepper. Mix well.

Rinse the 2 pounds of chicken pieces under cold water and pat them dry with paper towels.

Coat each piece of chicken in the flour mixture, ensuring they are fully covered. Shake off any excess flour.

In a large, deep skillet or pot, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil.

While the chicken is draining, chop the 4 stalks of scallions and set aside.
