Instructions
- 1
In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- 2
Add the 4 slices of bacon to the skillet and cook for about 5-7 minutes until crispy, flipping halfway through. Remove from skillet and set aside on a paper towel to drain excess fat.
- 3
In the same skillet, add 2 tablespoons of butter. Allow it to melt completely.
- 4
Once the butter is melted, add the 4 slices of bread to the skillet. Fry each side for about 2-3 minutes until golden brown and crispy. Remove from skillet and place on a plate.
- 5
In the same skillet, crack the 4 eggs and cook them sunny-side up or to your desired doneness, about 2-3 minutes for sunny-side up. Season with salt and pepper to taste.
- 6
While the eggs are cooking, chop the medium tomato and fresh parsley.
- 7
Once the eggs are done, assemble the dish: place the fried bread on each plate, top with an egg, and arrange 2 slices of bacon beside it.
- 8
Garnish with chopped tomato and parsley. Serve immediately while hot.
