A seafood dish similar to paella, but made with short noodles instead of rice, hailing from Valencia.

Ingredients

  • 8 oz fideos
  • 1 lb squid
  • 1 lb shrimp
  • 4 cups fish stock
  • 0.25 tsp saffron
  • 4 tbsp olive oil
  • 4 cloves garlic
  • 1 medium onion
  • 1 medium red bell pepper
  • 1 medium tomato
  • 1 tsp paprika
  • 2 tbsp parsley
  • 1 medium lemon

    Prepare the ingredients: Clean the squid and cut it into rings. Peel and devein the shrimp. Dice the onion, red bell pepper, and tomato. Mince the garlic.

    In a large paella pan or skillet, heat 4 tablespoons of olive oil over medium heat.

    Add the diced onion and red bell pepper to the pan, cooking for about 5 minutes until softened.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the squid rings to the pan and sauté for 3-4 minutes until they start to turn opaque.

    Add the diced tomato and paprika to the pan, stirring well and cooking for another 2 minutes.

    Pour in the fish stock and bring to a simmer. Add the saffron and stir to combine.

    Once the stock is simmering, add the fideos to the pan. Stir gently to distribute the noodles evenly.

    Cook the noodles for about 8-10 minutes, or until they absorb most of the liquid, stirring occasionally.

    In the last 2-3 minutes of cooking, add the shrimp on top of the noodles, allowing them to cook through.

    Once the noodles are tender and the shrimp are pink, remove the pan from heat. Let it rest for 5 minutes.

    Garnish with chopped parsley and serve with lemon wedges on the side.
