Fermented Kimchi and Tofu Stir-Fry
A spicy stir-fry featuring fermented kimchi and tofu, celebrating the fusion of Czech and Asian flavors. Perfect for a quick and satisfying vegan dinner.
Ingredients
- 1 cup kimchi
- 14 oz tofu
- 1 medium bell pepper
- 1 medium onion
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 3 cloves garlic
- 1 inch ginger
- 2 stalks green onions
- 1 tablespoon sesame seeds
- 4 cups cooked rice

Press the tofu for 15-20 minutes to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object on top.

While the tofu is pressing, prepare the vegetables. Dice the onion and bell pepper, and mince the garlic and ginger.

After pressing, cut the tofu into 1-inch cubes.

Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.

Add the cubed tofu to the skillet and sauté for about 5-7 minutes, turning occasionally, until golden brown on all sides.

Remove the tofu from the skillet and set it aside on a plate.

In the same skillet, add the remaining tablespoon of sesame oil. Add the diced onion, bell pepper, minced garlic, and ginger. Stir-fry for 3-4 minutes until the vegetables are tender.

Add the kimchi to the skillet and cook for an additional 2 minutes, allowing it to heat through and release its flavors.

Return the browned tofu to the skillet and pour in the soy sauce. Stir to combine all ingredients and cook for another 2 minutes.

Garnish with sliced green onions and sesame seeds before serving.
