Fazolový Guláš
A savory bean goulash flavored with spices, a popular vegetarian option in Czech cuisine.
Ingredients
- 1 cup dried beans
- 1 medium onion
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 3 cloves garlic
- 1 teaspoon salt
- 4 cups water
- 2 tablespoons olive oil
- 1 medium carrots
- 1 medium bell pepper
- 1 leaf bay leaf
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley

Soak the dried beans in water overnight or for at least 8 hours. Drain and rinse before cooking.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

Add minced garlic, diced carrots, and diced bell pepper to the pot. Cook for an additional 5 minutes until the vegetables soften.

Stir in the paprika, caraway seeds, salt, black pepper, and bay leaf. Cook for 1 minute to release the spices' aromas.

Add the soaked beans and water to the pot. Bring to a boil, then reduce the heat to low and cover. Simmer for 1 to 1.5 hours, or until the beans are tender.

Check occasionally and add more water if necessary to keep the beans submerged.

Once the beans are tender, remove the bay leaf and adjust seasoning if needed. Stir in chopped fresh parsley before serving.
