
Ensalada Malagueña
A refreshing salad from Málaga, featuring oranges, salted cod, olives, and potatoes. Perfect for a light lunch.
Ingredients
- 2 large oranges
- 8 oz salted cod
- 2 medium potatoes
- 1 cup black olives
- 1 small onion
- 1 4 olive oil
- 1 4 parsley
- 2 tbsp vinegar
- 1 tsp pepper

Soak the salted cod in cold water for 24 hours, changing the water several times to remove excess salt.

After soaking, drain the cod and place it in a pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for 15 minutes.

While the cod is cooking, peel and dice the potatoes into small cubes. Boil the potatoes in salted water for about 10-12 minutes until tender but firm.

Once the potatoes are cooked, drain them and let them cool.

Peel the oranges and cut them into segments, removing any seeds.

Finely chop the onion and parsley.

Once the cod is cooked, remove it from the pot, let it cool slightly, and then flake it into bite-sized pieces.

In a large bowl, combine the cooled potatoes, orange segments, flaked cod, chopped onion, black olives, and parsley.

In a small bowl, whisk together the olive oil, vinegar, salt, and pepper to create a dressing.

Drizzle the dressing over the salad mixture and gently toss to combine all ingredients.
