English Muffin with Bacon and Egg
Toasted English muffins topped with crispy bacon and a fried egg for a quick breakfast option.

- 2 pieces English muffins
- 4 slices bacon
- 2 pieces eggs
- 1 tablespoon butter
- 1 pinch salt
- 1 pinch pepper
- 2 slices cheddar cheese
- 1 tablespoon fresh chives

Preheat a skillet over medium heat for about 2 minutes.

Add the bacon slices to the skillet and cook for 4-5 minutes, flipping halfway through, until crispy. Remove the bacon and set aside on a paper towel to drain excess grease.

In the same skillet, crack the eggs into the remaining bacon grease. Cook for 3-4 minutes until the whites are set and the yolks are still runny. Season with a pinch of salt and pepper.

While the eggs are cooking, slice the English muffins in half and toast them in a toaster or under a broiler until golden brown.

Spread butter on the toasted English muffins while they are still warm.

Place 2 slices of crispy bacon on each muffin half, followed by a slice of cheddar cheese on top of the bacon.

Carefully place a fried egg on top of each muffin half, allowing the yolk to remain intact.

Sprinkle fresh chives over the egg and cheese, and add an additional pinch of salt and pepper to taste.
