Czech-Style Vegan Potato Dumplings

Ingredients

  • 2 pounds potatoes
  • 1 cup all-purpose flour
  • 1 medium onions
  • 8 ounces mushrooms
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup vegetable broth
  • 2 tablespoons fresh parsley

    Peel and chop the potatoes into quarters. Place them in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil over high heat.

    Once boiling, reduce the heat to medium and simmer the potatoes for 15-20 minutes, or until fork-tender. Drain and let cool slightly.

    While the potatoes are cooking, finely chop the onion and mushrooms. Heat 2 tablespoons of olive oil in a skillet over medium heat.

    Add the chopped onions to the skillet and sauté for about 5 minutes until translucent. Then, add the chopped mushrooms and cook for an additional 5-7 minutes until the mushrooms are browned. Season with salt and black pepper. Remove from heat and let cool.

    Once the potatoes are cool enough to handle, mash them in a large bowl. Add 1 cup of flour and mix until a dough forms. If the dough is too sticky, add a bit more flour.

    Divide the dough into 8 equal portions. Flatten each portion into a disc and place a spoonful of the onion and mushroom mixture in the center. Fold the dough over to encase the filling and roll into a ball, sealing the edges.

    Bring a large pot of salted water to a gentle boil. Carefully drop the dumplings in batches into the water. Cook for about 5-7 minutes or until they float to the surface.

    While the dumplings are cooking, prepare the mushroom sauce. In a separate saucepan, add 1 cup of vegetable broth and bring to a simmer. Add any remaining sautéed mushrooms and onions, and let simmer for 5 minutes.

    Once the dumplings are cooked, remove them with a slotted spoon and place them on a plate. Drizzle with the mushroom sauce and garnish with chopped fresh parsley.
