
Curried Goat with Dumplings
Tender goat meat cooked in aromatic curry spices, served with soft, fluffy dumplings.
Ingredients
- 2 pounds goat meat
- 3 tablespoons curry powder
- 2 medium onions
- 4 cloves garlic
- 2 teaspoons fresh thyme
- 2 cups dumpling flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons vegetable oil
- 1 whole scotch bonnet pepper
- 2 medium carrots
- 2 medium potatoes
- 4 cups chicken broth

Cut the goat meat into 1-inch pieces and set aside.

In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and minced garlic, sautéing for about 5 minutes until softened.

Stir in the curry powder and fresh thyme, cooking for an additional 2 minutes to release the spices' aroma.

Add the goat meat to the pot, stirring to coat it in the curry mixture. Cook for about 5-7 minutes until the meat is browned on all sides.

Pour in the chicken broth and add the whole scotch bonnet pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, until the goat meat is tender.

While the goat is cooking, peel and chop the carrots and potatoes into bite-sized pieces. Add these to the pot during the last 30 minutes of cooking.

In a separate bowl, combine the dumpling flour, baking powder, and salt. Gradually add water, mixing until a soft dough forms.

Once the goat meat is tender, drop spoonfuls of the dumpling dough into the pot. Cover and cook for an additional 15-20 minutes until the dumplings are fluffy and cooked through.

Remove the scotch bonnet pepper and adjust seasoning if necessary. Serve hot, garnished with fresh thyme if desired.
