Grilled lamb chops seasoned with herbs, served with a savory dipping sauce.
Ingredients
- 8 pieces lamb chops
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 4 cloves garlic
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon honey
- 1 tablespoon Dijon mustard
- 2 tablespoons water

In a small bowl, combine 2 tablespoons of olive oil, chopped rosemary, chopped thyme, minced garlic, salt, and black pepper to create a marinade.

Rub the marinade evenly over the lamb chops and let them marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.

Preheat your grill to medium-high heat (about 400°F).

Grill the lamb chops for 4-5 minutes on each side for medium-rare, or until they reach an internal temperature of 145°F.

While the lamb chops are grilling, prepare the dipping sauce by mixing the remaining 2 tablespoons of olive oil, lemon juice, honey, Dijon mustard, and water in a bowl until well combined.

Once the lamb chops are done, remove them from the grill and let them rest for 5 minutes.
