
Crispy Tostones with Garlic Sauce
Double-fried green plantains served with a garlicky dipping sauce for a crunchy snack or side dish.
Ingredients
- 2 large green plantains
- 4 cloves garlic
- 1 whole lime
- 1 cup olive oil
- 1 teaspoon salt
- 1 cup water
- 1 teaspoon black pepper
- 2 tablespoons fresh cilantro

Peel the green plantains by cutting off the ends and making a lengthwise slit in the skin. Remove the skin and slice the plantains into 1-inch thick pieces.

In a large skillet, heat 1/2 cup of olive oil over medium heat until hot (about 350°F).

Fry the plantain slices in batches for about 3-4 minutes on each side, or until they are golden yellow but not browned. Remove them from the oil and drain on paper towels.

Using the bottom of a flat plate or a tostonera, gently flatten each fried plantain slice to about 1/2-inch thick.

Return the flattened plantains to the hot oil and fry again for another 2-3 minutes on each side, until they are crispy and golden brown. Drain on paper towels and sprinkle with salt.

For the garlic sauce, finely mince the garlic cloves and mix them in a bowl with the juice of 1 lime, 1/2 cup of olive oil, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir well to combine.

Chop fresh cilantro and mix it into the garlic sauce for added flavor.

Serve the crispy tostones warm with the garlic sauce on the side for dipping.
