- 1 cup buttermilk
- 2 tablespoons cajun seasoning
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 cups oil for frying
- 1 cup remoulade sauce
- 4 pieces lemon wedges
- 2 tablespoons fresh parsley

In a medium bowl, combine the buttermilk and 1 tablespoon of cajun seasoning. Add the catfish pieces, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

In a separate bowl, mix together the cornmeal, flour, remaining 1 tablespoon of cajun seasoning, salt, and black pepper.

Heat the oil in a deep frying pan or Dutch oven over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the batter into it; it should sizzle immediately.

Remove the catfish from the buttermilk and let any excess liquid drip off. Dredge each piece in the cornmeal mixture, ensuring they are well coated.

Carefully place the coated catfish bites into the hot oil, frying in batches to avoid overcrowding. Fry for 4-5 minutes or until golden brown and crispy, turning occasionally.
