Instructions
- 1
Prepare the chicken by patting the thighs dry with paper towels. This helps achieve a crispy texture.
- 2
In a shallow dish, combine flour, salt, black pepper, paprika, and garlic powder. Mix well.
- 3
Dredge each chicken thigh in the flour mixture, ensuring they are fully coated. Shake off excess flour.
- 4
Heat oil in a large skillet over medium-high heat until it reaches 350°F (175°C).
- 5
Carefully add the chicken thighs to the hot oil, cooking in batches if necessary. Fry for 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- 6
Once cooked, transfer the chicken to a plate lined with paper towels to drain excess oil.
- 7
While the chicken is frying, prepare the mango salsa. Dice the ripe mango, red onion, and jalapeño. Chop the cilantro.
- 8
In a bowl, combine the diced mango, red onion, jalapeño, chopped cilantro, lime juice, and honey. Mix well and season with salt to taste.
- 9
Serve the crispy chicken hot, topped with the fresh mango salsa. Enjoy your tropical Caribbean-inspired lunch!
