A fresh sandwich of crispy avocado slices and juicy tomatoes, layered with zesty aioli on rustic bread.

Ingredients

  • 1 large avocado
  • 1 large tomato
  • 4 slices whole grain bread
  • 3 tablespoons vegan mayo
  • 1 medium lemon
  • 1 cup arugula
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 pinch red pepper flakes

    Preheat a skillet over medium heat for about 5 minutes.

    While the skillet is heating, slice the large avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork until smooth, then stir in the juice of half a lemon, garlic powder, salt, and black pepper.

    Slice the large tomato into thick slices and set aside.

    Spread 1 tablespoon of vegan mayo on one side of each slice of whole grain bread.

    In the heated skillet, add 1 tablespoon of olive oil. Place two slices of bread mayo-side down in the skillet and toast for about 3-4 minutes until golden brown.

    While the first side is toasting, spread a generous layer of the mashed avocado on the un-toasted side of the bread in the skillet.

    After 3-4 minutes, flip the bread slices and toast the other side for another 3-4 minutes until golden brown.

    Remove the toasted bread from the skillet and assemble the sandwich: on one slice, layer the avocado, followed by the tomato slices, a handful of arugula, and a sprinkle of red pepper flakes.

    Top with the second slice of bread, mayo-side down, and gently press down to secure.

    Cut the sandwich in half and serve immediately with a side of your choice.
