
Cod with Parsley Sauce
A light and flavorful dish of poached cod topped with a creamy parsley sauce, perfect for a delightful dinner.
Ingredients
- 2 fillets cod fillets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup milk
- 1 cup fresh parsley
- 1 whole lemon
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 cups water
- 1 leaf bay leaf
- 1 teaspoon thyme

In a medium saucepan, combine 2 cups of water, 1 bay leaf, and 1 teaspoon of thyme. Bring to a simmer over medium heat.

Once the water is simmering, add the cod fillets and poach for about 8-10 minutes, or until the fish is opaque and flakes easily with a fork. Remove the cod and set aside.

In a separate saucepan, melt 2 tablespoons of butter over medium heat. Once melted, whisk in 2 tablespoons of all-purpose flour and cook for 1-2 minutes until bubbly and lightly golden.

Gradually whisk in 1 cup of milk, ensuring there are no lumps. Continue to cook, whisking constantly, until the sauce thickens, about 5-7 minutes.

Finely chop 1 cup of fresh parsley and add it to the sauce. Squeeze the juice of 1 lemon into the sauce and season with 1 teaspoon of salt and 1 teaspoon of black pepper. Stir well to combine.

To serve, place the poached cod fillets on plates and generously spoon the creamy parsley sauce over the top.
