  • 1.5 pounds chicken thighs
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon ginger
  • 4 cloves garlic
  • 1.5 cups jasmine rice
  • 2 medium bell peppers
  • 1 medium onion
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.25 cup cilantro

    Begin by cooking the jasmine rice. Rinse 1.5 cups of jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

    While the rice is cooking, prepare the chicken. Cut 1.5 pounds of chicken thighs into bite-sized pieces and season with 1 teaspoon of salt and 1 teaspoon of black pepper.

    In a large skillet or pot, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken pieces and sauté for 6-8 minutes until browned and cooked through. Remove the chicken from the pan and set aside.

    In the same skillet, add 1 medium chopped onion, 4 minced garlic cloves, and 1 tablespoon of minced ginger. Sauté for 3-4 minutes until the onion is translucent and fragrant.

    Add 2 tablespoons of curry powder to the skillet and stir for 1 minute to toast the spices.

    Pour in 1 can (13.5 oz) of coconut milk and 1 cup of chicken broth. Stir well to combine and bring the mixture to a simmer.

    Chop 2 medium bell peppers into strips and add them to the skillet. Return the cooked chicken to the pot and stir everything together. Let it simmer for 10-15 minutes, allowing the flavors to meld.
