Coconut Chia Pudding with Berries
A creamy and satisfying chia pudding made with coconut milk, topped with a mix of fresh berries. Perfect for a healthy breakfast or snack.
Ingredients
- 1 cup chia seeds
- 1 cup coconut milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 cup mixed berries
- 1 tablespoon coconut flakes

In a medium bowl, combine 1 cup of chia seeds and a pinch of salt.

Pour in 1 cup of coconut milk, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract. Stir well to combine.

Let the mixture sit for 5 minutes. Stir again to prevent clumping.

Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, or overnight for best results. The chia seeds will absorb the liquid and create a pudding-like consistency.

Once the pudding is set, remove it from the refrigerator and give it a good stir.
