Ingredients

  • 1 head cauliflower
  • 2 medium zucchini
  • 1 large bell pepper
  • 1 cup cilantro
  • 2 juiced lime
  • 3 tablespoons olive oil
  • 3 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 small red onion
  • 1 cup corn
  • 1 teaspoon chili powder

    Preheat your grill or grill pan to medium-high heat (about 400°F).

    Prepare the cauliflower by removing the leaves and stem. Cut the cauliflower into florets.

    In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.

    Slice the zucchini and bell pepper into bite-sized pieces. Dice the red onion.

    In a large bowl, combine the zucchini, bell pepper, red onion, corn, 2 tablespoons of olive oil, chili powder, salt, and black pepper. Toss to coat evenly.

    Transfer the vegetable mixture to the grill. Grill for about 8-10 minutes, turning occasionally, until the vegetables are tender and have grill marks.

    While the vegetables are grilling, heat the remaining tablespoon of olive oil in a large skillet over medium heat.
