Cilantro Lime Cauliflower Rice with Grilled Vegetables
Light and zesty cilantro lime cauliflower rice topped with a medley of grilled vegetables.
Ingredients
- 1 head cauliflower
- 2 medium zucchini
- 1 large bell pepper
- 1 cup cilantro
- 2 juiced lime
- 3 tablespoons olive oil
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 small red onion
- 1 cup corn
- 1 teaspoon chili powder

Preheat your grill or grill pan to medium-high heat (about 400°F).

Prepare the cauliflower by removing the leaves and stem. Cut the cauliflower into florets.

In a food processor, pulse the cauliflower florets until they resemble rice grains. Set aside.

Slice the zucchini and bell pepper into bite-sized pieces. Dice the red onion.

In a large bowl, combine the zucchini, bell pepper, red onion, corn, 2 tablespoons of olive oil, chili powder, salt, and black pepper. Toss to coat evenly.

Transfer the vegetable mixture to the grill. Grill for about 8-10 minutes, turning occasionally, until the vegetables are tender and have grill marks.

While the vegetables are grilling, heat the remaining tablespoon of olive oil in a large skillet over medium heat.

Mince the garlic and add it to the skillet. Sauté for about 1 minute until fragrant.

Add the processed cauliflower rice to the skillet. Sauté for about 5-7 minutes, stirring occasionally, until the cauliflower is tender.

Remove the skillet from heat and stir in the lime juice and chopped cilantro. Mix well.

Once the vegetables are done grilling, remove them from the grill and let them cool slightly.

Serve the cilantro lime cauliflower rice topped with the grilled vegetables. Garnish with additional cilantro if desired.
