
Chow Mein (炒面)
Stir-fried noodles tossed with vegetables and your choice of protein in a savory sauce.
Ingredients
- 8 oz egg noodles
- 2 cups cabbage
- 1 cup carrots
- 1 cup bean sprouts
- 1 4 soy sauce
- 1 lb chicken breast
- 2 tbsp vegetable oil
- 3 cloves garlic
- 1 bunch green onions
- 1 tbsp sesame oil
- 1 tsp black pepper
- 1 tsp salt

Bring a large pot of water to a boil. Add the egg noodles and cook according to package instructions, usually about 6-8 minutes until al dente. Drain and set aside.

While the noodles are cooking, slice the chicken breast into thin strips. Season with salt and black pepper.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry for about 5-7 minutes or until cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and stir-fry for 30 seconds until fragrant.

Add the sliced cabbage and carrots to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.

Add the bean sprouts and cooked chicken back into the skillet. Pour in the soy sauce and sesame oil, stirring to combine everything evenly. Cook for another 2-3 minutes.

Add the cooked egg noodles to the skillet. Toss everything together for 2-3 minutes until the noodles are heated through and well coated with the sauce.

Slice the green onions and sprinkle them over the chow mein. Serve hot.
