A refreshing vegan mousse made from ripe avocados and zesty lime, topped with airy coconut whipped cream.

  • 2 medium ripe avocados
  • 1 lime lime juice
  • 1 tablespoon agave syrup
  • 1 can coconut cream
  • 1 teaspoon vanilla extract
  • 1 pinch sea salt
  • 1 tablespoon coconut flakes
  • 4 leaves fresh mint leaves

    Start by chilling the coconut cream. Place a can of coconut cream in the refrigerator for at least 4 hours or overnight.

    Cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender.

    Add the lime juice, agave syrup, sea salt, and vanilla extract to the blender with the avocado.

    Blend the mixture on high speed until it is completely smooth and creamy, about 1-2 minutes. Scrape down the sides of the blender as needed.
