
Chili Con Carne
A hearty and spicy stew made with ground beef, beans, tomatoes, and chili spices, perfect for cold nights.
Ingredients
- 1 lb ground beef
- 2 cans kidney beans
- 1 can diced tomatoes
- 1 medium onion
- 2 tbsp chili powder
- 1 tbsp cumin
- 3 cloves garlic
- 1 medium bell pepper
- 1 cup beef broth
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 leaf bay leaf
- 1 cup sour cream
- 1 cup shredded cheese

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Add 1 medium chopped onion and 1 medium chopped bell pepper to the pot. Sauté for about 5 minutes until softened.

Add 3 minced garlic cloves and sauté for an additional 1 minute until fragrant.

Increase the heat to medium-high and add 1 lb of ground beef. Cook until browned, about 7-10 minutes, breaking it apart with a spoon.

Drain excess fat from the pot, if necessary.

Stir in 2 tablespoons of chili powder, 1 tablespoon of cumin, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook for 1-2 minutes to toast the spices.

Add 2 cans of kidney beans (drained and rinsed), 1 can of diced tomatoes (with juice), and 1 cup of beef broth to the pot.

Add 1 bay leaf and bring the mixture to a boil.

Reduce the heat to low, cover, and let it simmer for 30-45 minutes, stirring occasionally.

Taste and adjust seasonings if necessary. Remove the bay leaf before serving.

Serve hot, topped with sour cream and shredded cheese if desired.
