
Ceviche de Camarón

Ingredients
- 1 pound shrimp
- 1 cup lime juice
- 2 medium tomatoes
- 1 medium red onion
- 1 bunch cilantro
- 1 large avocado
- 1 medium jalapeño
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bag tortilla chips

Start by cleaning the shrimp. Remove the shells and tails, then devein them. Rinse under cold water and pat dry.

In a glass or ceramic bowl, combine the shrimp and lime juice. Ensure the shrimp are fully submerged. Cover and refrigerate for 30 minutes to 1 hour until the shrimp turn pink and opaque.

While the shrimp is curing, dice the tomatoes, red onion, jalapeño, and avocado. Finely chop the cilantro.

Once the shrimp is ready, drain excess lime juice if desired. Add the diced tomatoes, onions, jalapeño, and cilantro to the shrimp.

Drizzle with olive oil and season with salt and black pepper. Gently mix all ingredients together until well combined.

Taste and adjust seasoning if necessary. If desired, add more lime juice for acidity or salt for flavor.
