A rustic tart filled with caramelized figs and walnuts, all enveloped in a buttery vegan crust.

Ingredients

  • 12 units fresh figs
  • 1 cup walnuts
  • 1.5 cups whole wheat flour
  • 0.5 cup coconut oil
  • 1 4 tablespoons agave syrup
  • 0.5 teaspoon sea salt
  • 3 tablespoons water
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

    Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine 1.5 cups of whole wheat flour, 0.5 teaspoon of sea salt, and 0.5 teaspoon of ground cinnamon.

    Melt 0.5 cup of coconut oil and mix it with the flour mixture until crumbly.

    Add 3 tablespoons of water and 1 tablespoon of agave syrup to the mixture. Stir until the dough comes together.

    Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork and refrigerate for 15 minutes.

    While the crust is chilling, prepare the filling. Slice 12 fresh figs in half and set aside.

    In a skillet over medium heat, add the sliced figs, 1 cup of chopped walnuts, 1 tablespoon of agave syrup, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Cook for about 5-7 minutes until the figs are caramelized and soft.

    Remove the crust from the refrigerator and fill it with the caramelized fig and walnut mixture, spreading it evenly.

    Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
