
Calamares a la Romana
Crispy fried squid rings, a popular tapas dish that brings the flavors of the sea to your table.
Ingredients
- 1 pound squid
- 1 cup all-purpose flour
- 2 large eggs
- 2 cups olive oil
- 1 lemon
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons fresh parsley

Begin by cleaning the squid. Remove the head, innards, and cartilage, then rinse under cold water. Cut the body into 1/2-inch rings.

In a mixing bowl, whisk together the flour, salt, black pepper, and paprika.

In another bowl, beat the eggs until well mixed.

Heat the olive oil in a large frying pan over medium-high heat until it reaches 375°F (190°C).

Dip each squid ring first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour.

Carefully place the coated squid rings into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown.

Using a slotted spoon, remove the fried squid and place them on a plate lined with paper towels to absorb excess oil.

Repeat the frying process until all squid rings are cooked.

Once all the squid is fried, squeeze fresh lemon juice over the top and garnish with chopped parsley.

Serve immediately while hot, with additional lemon wedges on the side.
