- 2 tablespoons cajun seasoning
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup smoking wood chips
- 1 whole lemon

Prepare the chicken thighs by patting them dry with paper towels to remove excess moisture.

In a small bowl, combine the cajun seasoning, paprika, garlic powder, onion powder, salt, black pepper, and olive oil to form a paste.

Rub the spice mixture evenly over the chicken thighs, ensuring they are well-coated. Let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

Soak the smoking wood chips in water for at least 30 minutes before smoking.

Preheat your smoker to 225°F (107°C). If using a grill, set it up for indirect heat and add the soaked wood chips to the coals.
