
Cajun Shrimp Tacos with Spicy Slaw
Spicy Cajun shrimp served in soft tortillas with a crunchy slaw for a vibrant, flavorful lunch.
Ingredients
- 1 pound shrimp
- 2 tablespoons cajun seasoning
- 8 units corn tortillas
- 2 cups cabbage
- 1 unit lime
- 1 cup cilantro
- 1 cup mayonnaise
- 2 tablespoons hot sauce
- 1 medium carrot
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 medium avocado

Rinse and pat dry the shrimp, then place them in a bowl. Add 2 tablespoons of Cajun seasoning, 1 teaspoon of salt, and 1 teaspoon of black pepper. Toss to coat the shrimp evenly. Let marinate for 15 minutes.

While the shrimp is marinating, prepare the spicy slaw. In a large bowl, combine 2 cups of shredded cabbage and 1 medium grated carrot.

In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of hot sauce, the juice of 1 lime, and a pinch of salt. Pour the dressing over the cabbage and carrot mixture and toss until well combined. Set aside.

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the marinated shrimp and cook for 2-3 minutes on each side until they turn pink and opaque.

While the shrimp cooks, warm the corn tortillas in a separate pan over medium heat for about 30 seconds on each side until pliable.

To assemble the tacos, place a few shrimp on each tortilla, top with the spicy slaw, and garnish with chopped cilantro and slices of avocado.
