
Burokėlių Sriuba - Beet Soup with Meat
A hearty soup featuring tender beef and earthy beets, simmered to perfection with spices.
Ingredients
- 1 pound beef chuck
- 3 medium beets
- 2 medium carrots
- 1 large onion
- 2 leaves bay leaves
- 1 teaspoon black peppercorns
- 3 cloves garlic
- 2 medium potatoes
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 8 cups water
- 1 tablespoon fresh dill

Instructions

In a large pot, heat 2 tablespoons of vegetable oil over medium heat.

Add 1 pound of beef chuck, cut into 1-inch cubes, and brown on all sides for about 5-7 minutes.

Chop 1 large onion and add it to the pot. Sauté for 3-4 minutes until the onion is translucent.

Add 8 cups of water, 2 bay leaves, and 1 teaspoon of black peppercorns to the pot. Bring to a boil.

Once boiling, reduce heat to low and simmer for 1 hour, skimming off any foam that rises to the surface.

While the beef is simmering, peel and dice 3 medium beets, 2 medium carrots, and 2 medium potatoes.

After 1 hour, add the diced beets, carrots, and potatoes to the pot. Season with 1 teaspoon of salt.

Mince 3 cloves of garlic and add them to the pot. Stir well to combine.

Continue to simmer the soup for an additional 30-40 minutes, or until all vegetables are tender.

Remove the bay leaves and adjust seasoning if necessary. Stir in 1 tablespoon of fresh dill before serving.

Serve hot, garnished with additional dill if desired.
