Bubble and Squeak with Fried Egg

A classic British dish made from leftover vegetables, fried until crispy and topped with a perfectly fried egg. Ideal for breakfast or brunch.

Ingredients

  • 2 medium potatoes
  • 1 cup cabbage
  • 1 medium carrots
  • 1 small onion
  • 2 egg
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon parsley

    Peel and chop the potatoes into small cubes. Place them in a pot of salted water and bring to a boil.

    Once boiling, reduce heat and simmer for 15-20 minutes until potatoes are tender. Drain and let cool slightly.

    While the potatoes are cooking, finely chop the cabbage, grate the carrot, and dice the onion.

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add the onion and cook for 3-4 minutes until translucent.

    Add the grated carrot and chopped cabbage to the skillet. Season with salt and pepper. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender.

    Mash the cooked potatoes in a bowl and then add them to the skillet with the vegetables. Mix well to combine.

    Increase the heat to medium-high and press the mixture down into the skillet. Cook for about 5-7 minutes until the bottom is golden and crispy.

    Using a spatula, flip the mixture over in sections and cook for an additional 5-7 minutes until the other side is also golden and crispy.

    In a separate skillet, heat the remaining 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat. Crack the eggs into the skillet and fry to your desired doneness (about 2-3 minutes for sunny-side up).

    Once the bubble and squeak is ready, serve it on plates and top each serving with a fried egg. Garnish with chopped parsley.
