
Bubble and Squeak
A delicious mix of leftover vegetables and potatoes, fried until crispy and golden, perfect for a comforting dinner.
Ingredients
- 2 cups cabbage
- 4 medium potatoes
- 2 medium carrots
- 1 medium onion
- 4 tablespoons butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons parsley

Peel and chop the potatoes into even-sized chunks. Place them in a large pot of salted water and bring to a boil. Cook for about 15-20 minutes, or until tender.

While the potatoes are cooking, finely chop the cabbage, carrots, and onion.

In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent.

Add the chopped cabbage and carrots to the skillet. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are softened. Season with salt and black pepper.

Once the potatoes are cooked, drain them and return them to the pot. Mash the potatoes until smooth and add them to the skillet with the sautéed vegetables. Mix well to combine.

Increase the heat to medium-high. Press the mixture down into the skillet to form a flat layer. Cook for about 5-7 minutes, or until the bottom is crispy and golden.

Using a spatula, flip the mixture over in sections to cook the other side. Add the remaining 2 tablespoons of butter around the edges to help it crisp up. Cook for another 5-7 minutes.

Once both sides are golden brown and crispy, remove from heat. Sprinkle with chopped parsley before serving.
