A traditional Czech potato salad made with boiled potatoes, pickles, and mayonnaise, perfect for lunch or as a side dish.

Ingredients

  • 2 lbs potatoes
  • 1 cup pickles
  • 1 cup peas
  • 1 cup mayonnaise
  • 1 medium onions
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large hard-boiled eggs
  • 1 tablespoon mustard
  • 2 tablespoons fresh parsley

    Wash and peel the potatoes. Cut them into uniform chunks (about 1-2 inches) for even cooking.

    Place the potato chunks in a large pot and cover them with cold water. Add 1 teaspoon of salt to the water.

    Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium and cook the potatoes for about 15-20 minutes, or until fork-tender. Drain and let cool.

    While the potatoes are cooling, finely chop the onions and pickles. If using fresh peas, blanch them in boiling water for 2-3 minutes, then drain and cool.

    In a large mixing bowl, combine the cooled potatoes, chopped pickles, peas, onions, and chopped hard-boiled eggs.

    In a separate bowl, mix the mayonnaise, mustard, salt, and black pepper until well combined.

    Pour the mayonnaise mixture over the potato salad ingredients and gently fold everything together until well-coated.

    Taste and adjust seasoning if necessary. Garnish with chopped fresh parsley.
