
Braised Pork Belly (角煮)
Rich and savory braised pork belly cooked in a soy sauce and sugar mixture until tender, perfect for a Japanese-inspired dinner.
Ingredients
- 2 pounds pork belly
- 1 cup soy sauce
- 1 cup sake
- 1 cup mirin
- 1 cup sugar
- 2 inches ginger
- 2 stalks green onions
- 2 cups water
- 4 whole hard-boiled eggs
- 1 tablespoon sesame seeds

Cut the pork belly into 1.5-inch cubes and set aside.

In a large pot, combine 1 cup of soy sauce, 1 cup of sake, 1 cup of mirin, and 1 cup of sugar. Stir until the sugar is dissolved.

Peel and slice the ginger into thin pieces. Add to the pot along with 2 cups of water.

Add the pork belly cubes to the pot. Bring the mixture to a boil over medium-high heat.

Once boiling, reduce the heat to low and cover the pot. Let it simmer for 2 hours, turning the pork belly occasionally to ensure even cooking.

After 2 hours, add the hard-boiled eggs to the pot and continue to simmer for another 30 minutes.

Remove the pot from heat and let it cool slightly. The pork belly should be tender and flavorful.

Slice the green onions and sprinkle them on top of the braised pork belly before serving.
