Braised Artichokes with Lemon and Garlic
Tender artichokes braised in a flavorful lemon and garlic broth, perfect as a main or side dish.
Ingredients
- 4 whole artichokes
- 1 cup lemon juice
- 6 cloves garlic
- 3 tablespoons olive oil
- 2 cups vegetable stock
- 1 bunch fresh parsley
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon red pepper flakes
- 1 tablespoon lemon zest

Prepare the artichokes: Trim the stems, remove the tough outer leaves, and cut the tops off. Rub the cut surfaces with lemon juice to prevent browning.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Place the prepared artichokes in the skillet, cut side down, and cook for 4-5 minutes until they start to brown.

Add the vegetable stock, remaining lemon juice, red pepper flakes, salt, and black pepper to the skillet. Bring to a simmer.

Cover the skillet and reduce the heat to low. Let the artichokes braise for 30-35 minutes, or until they are tender when pierced with a fork.

Once cooked, remove the lid and sprinkle lemon zest and chopped fresh parsley over the artichokes. Cook uncovered for an additional 5 minutes to allow the flavors to meld.
