  • 2 large potatoes
  • 1 cup all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 tablespoons butter
  • 1 cup sour cream
  • 2 tablespoons chives
  • 1 teaspoon black pepper

    Peel the large potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

    In a mixing bowl, combine the grated potatoes with 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of salt. Mix well to combine.

    In a separate bowl, mash 1 potato (cooked and cooled) and mix it with 1 cup of buttermilk, 2 tablespoons of chopped chives, and 1 teaspoon of black pepper.

    Combine the wet ingredients with the dry ingredients and stir until just mixed. The batter should be thick but pourable.

    Heat a large skillet over medium heat and add 2 tablespoons of butter. Once melted and bubbling, ladle about 1/4 cup of the batter into the skillet for each pancake.

    Cook the pancakes for about 4-5 minutes on one side, or until golden brown. Flip and cook for an additional 3-4 minutes on the other side.
