
Boxty: Traditional Irish Potato Pancakes
Crispy potato pancakes made from grated and mashed potatoes, served with a dollop of sour cream.
Ingredients
- 2 large potatoes
- 1 cup all-purpose flour
- 1 cup buttermilk
- 1 teaspoon baking powder
- 1 teaspoon salt
- 4 tablespoons butter
- 1 cup sour cream
- 2 tablespoons chives
- 1 teaspoon black pepper

Peel the large potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

In a mixing bowl, combine the grated potatoes with 1 cup of all-purpose flour, 1 teaspoon of baking powder, and 1 teaspoon of salt. Mix well to combine.

In a separate bowl, mash 1 potato (cooked and cooled) and mix it with 1 cup of buttermilk, 2 tablespoons of chopped chives, and 1 teaspoon of black pepper.

Combine the wet ingredients with the dry ingredients and stir until just mixed. The batter should be thick but pourable.

Heat a large skillet over medium heat and add 2 tablespoons of butter. Once melted and bubbling, ladle about 1/4 cup of the batter into the skillet for each pancake.

Cook the pancakes for about 4-5 minutes on one side, or until golden brown. Flip and cook for an additional 3-4 minutes on the other side.

Transfer the cooked pancakes to a plate and keep warm. Repeat the process with the remaining batter, adding more butter to the skillet as needed.

Serve the boxty warm with a dollop of sour cream on top and a sprinkle of extra chives if desired.
