
Bhindi Masala - Stir-Fried Okra
Stir-fried okra with spices and onions, a simple yet flavorful vegetarian dish perfect for dinner.
Ingredients
- 1 pound okra
- 1 medium onion
- 1 medium tomato
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 whole green chili
- 3 cloves garlic
- 1 inch ginger
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 2 tablespoons fresh cilantro
- 1 tablespoon lemon juice

Wash the okra thoroughly under running water. Pat dry with a clean towel and cut off the ends. Slice the okra into 1-inch pieces.

Peel and thinly slice the onion. Dice the tomato. Mince the garlic cloves and ginger.

Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Once hot, add 1 teaspoon of cumin seeds and let them sizzle for about 30 seconds until fragrant.

Add the sliced onion to the skillet and sauté for 5-7 minutes until they turn golden brown.

Stir in the minced garlic, ginger, and 1 whole green chili. Cook for another 1-2 minutes until the raw smell of garlic disappears.

Add the diced tomato, 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and 1 teaspoon of salt. Cook for about 3-4 minutes until the tomatoes soften.

Add the sliced okra to the skillet. Stir well to combine all ingredients. Cook on medium heat for 10-12 minutes, stirring occasionally, until the okra is tender and cooked through.

Once cooked, remove from heat. Squeeze 1 tablespoon of lemon juice over the top and garnish with 2 tablespoons of chopped fresh cilantro.
