Instructions
- 1
Preheat your smoker to 225°F (107°C).
- 2
In a small bowl, mix together smoked paprika, black pepper, salt, and garlic powder to create a dry rub.
- 3
Rub the beef brisket generously with olive oil, then apply the dry rub evenly over the entire surface of the brisket.
- 4
Place the brisket in the smoker and smoke for about 8-10 hours, or until the internal temperature reaches 195°F (90°C).
- 5
While the brisket is smoking, prepare the dill pickle relish by finely chopping the dill pickles and mixing them with fresh dill in a bowl.
- 6
Once the brisket is done, remove it from the smoker and let it rest for at least 30 minutes before slicing.
- 7
Slice the brisket against the grain into thin pieces.
- 8
Toast the slider buns lightly on the grill or in a toaster.
- 9
Assemble the sliders by placing a slice of brisket on each bun, adding a dollop of mustard, a slice of onion, and a spoonful of dill pickle relish.
- 10
Drizzle BBQ sauce over the top and serve immediately.
