Ingredients

  • 2 pounds pork ribs
  • 1 cup honey
  • 1 cup bbq sauce
  • 2 tablespoons paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon apple cider vinegar
  • 1 cup water
  • 2 cups wood chips (hickory or apple)

    Prepare the ribs: Remove the membrane from the back of the ribs and trim any excess fat.

    In a small bowl, mix together paprika, black pepper, salt, garlic powder, and onion powder to create a dry rub.

    Rub the spice mixture generously over both sides of the ribs, ensuring an even coating. Let the ribs sit at room temperature for about 30 minutes.

    Preheat your smoker to 225°F (107°C). If using a charcoal smoker, prepare it with a water pan and add the wood chips for smoking.

    Place the ribs in the smoker, bone side down. Smoke for 3 hours, maintaining a temperature of 225°F (107°C).

    After 3 hours, prepare the honey glaze: In a small saucepan, combine honey, BBQ sauce, apple cider vinegar, and water. Heat over medium until it simmers, then reduce to low and let it thicken slightly for about 10 minutes.

    After the initial smoking period, brush the honey glaze on the ribs. Wrap the ribs in aluminum foil and return them to the smoker for an additional 2 hours.

    After 2 hours, remove the ribs from the foil and brush with more honey glaze. Place them back in the smoker for an additional 30 minutes to set the glaze.

    Once done, remove the ribs from the smoker and let them rest for 10 minutes before slicing.
