
BBQ Shrimp and Grits
Savory BBQ shrimp served over creamy grits for a delicious Southern-inspired lunch.
Ingredients
- 1 pound shrimp
- 1 cup grits
- 4 tablespoons butter
- 1 cup cheddar cheese
- 4 cloves garlic
- 1 cup bbq sauce
- 4 stalks green onions
- 4 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 tablespoon lemon juice

In a medium saucepan, bring 4 cups of chicken broth to a boil over medium-high heat.

Once boiling, slowly whisk in 1 cup of grits. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until thickened.

While the grits are cooking, peel and devein 1 pound of shrimp. Set aside.

In a large skillet, melt 2 tablespoons of butter over medium heat. Add 4 cloves of minced garlic and sauté for 1-2 minutes until fragrant.

Add the shrimp to the skillet and season with 1 teaspoon of salt, 1 teaspoon of black pepper, 1 teaspoon of paprika, and 1 teaspoon of cayenne pepper. Cook for 3-4 minutes until the shrimp turn pink.

Pour in 1 cup of BBQ sauce and stir to coat the shrimp. Cook for an additional 2-3 minutes to heat through.

Once the grits are cooked, remove from heat and stir in 2 tablespoons of butter and 1 cup of shredded cheddar cheese until melted and creamy.

To serve, spoon the creamy grits onto plates and top with the BBQ shrimp mixture.
