Ingredients

  • 2 cans young green jackfruit
  • 1 cup BBQ sauce
  • 8 pieces soft tortillas
  • 2 cups green cabbage
  • 1 cup carrots
  • 2 tablespoons lime juice
  • 1 bunch fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

    Drain and rinse the jackfruit cans under cold water. Remove any hard core pieces and tear the jackfruit into shreds using your fingers or a fork.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shredded jackfruit and sauté for about 5 minutes until slightly browned.

    Add 1 cup of BBQ sauce, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and salt and black pepper to taste. Stir well to combine.

    Cover the skillet and let it simmer on low heat for 15-20 minutes, stirring occasionally, until the jackfruit is tender and well-coated in sauce.

    While the jackfruit is cooking, prepare the slaw. In a large bowl, combine 2 cups of shredded green cabbage, 1 cup of shredded carrots, and 2 tablespoons of lime juice. Toss to mix well.

    Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

    To assemble the tacos, place a generous portion of BBQ jackfruit on each tortilla, top with slaw, and garnish with chopped fresh cilantro.
