
BBQ Pork Tacos with Pineapple Salsa

- 2 cups pulled pork
- 12 pieces corn tortillas
- 2 cups pineapple
- 1 medium red onion
- 1 bunch cilantro
- 2 pieces lime
- 1 cup BBQ sauce
- 1 medium jalapeño
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon olive oil

Prepare the pineapple salsa: Dice the pineapple, red onion, and jalapeño. In a bowl, combine 2 cups of diced pineapple, 1 medium diced red onion, 1 diced jalapeño (seeds removed for less heat), and 1 bunch of chopped cilantro. Squeeze the juice of 2 limes over the mixture, add 1 teaspoon of salt, and mix well. Set aside to let the flavors meld for at least 15 minutes.

Heat the pulled pork: In a medium saucepan over medium heat, combine 2 cups of pulled pork with 1 cup of BBQ sauce. Stir occasionally and heat for about 10 minutes until warmed through.

Warm the corn tortillas: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add 6 corn tortillas at a time and warm for about 30 seconds on each side until pliable. Repeat with the remaining tortillas.

Assemble the tacos: On each warm corn tortilla, add a generous portion of the BBQ pulled pork. Top with a spoonful of pineapple salsa.
