Fresh whole fish marinated in citrus and herbs, then grilled to perfection for a smoky flavor.

Ingredients

  • 2 lbs whole fish
  • 1 cup olive oil
  • 2 whole lemons
  • 2 whole oranges
  • 4 cloves garlic
  • 1 cup fresh herbs (parsley, thyme, or dill)
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup lemon slices
  • 1 cup orange slices
  • 2 cups wood chips (for grilling)

    Prepare the marinade by combining 1 cup of olive oil, juice of 2 lemons, juice of 2 oranges, minced garlic cloves, chopped fresh herbs, salt, and black pepper in a bowl.

    Clean the whole fish thoroughly under cold water and pat dry with paper towels.

    Make 3-4 diagonal cuts on each side of the fish to help the marinade penetrate and to ensure even cooking.

    Place the fish in a large resealable plastic bag or a shallow dish and pour the marinade over it. Ensure the fish is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 2-4 hours.

    Preheat your grill to medium-high heat (about 375°F to 400°F). If using a charcoal grill, prepare the coals and add wood chips for smoking.

    Remove the fish from the marinade and let excess marinade drip off. Stuff the cavity of the fish with lemon and orange slices.

    Oil the grill grates lightly to prevent sticking. Place the fish on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork and has grill marks.

    Once cooked, remove the fish from the grill and let it rest for about 5 minutes before serving.

    Serve the grilled fish with additional lemon and orange slices, and garnish with fresh herbs.
