Instructions
- 1
Preheat your grill to medium-high heat (about 400°F).
- 2
In a small saucepan, combine the balsamic vinegar and honey. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes until the mixture thickens and reduces by half. Remove from heat and let cool.
- 3
In a bowl, whisk together olive oil, minced garlic, salt, black pepper, chopped rosemary, and thyme.
- 4
Clean the portobello mushrooms with a damp cloth. Remove the stems and gills if desired, then brush both sides of the mushrooms with the olive oil mixture.
- 5
Place the mushrooms on the preheated grill, gill side down. Grill for about 5-7 minutes.
- 6
Flip the mushrooms and grill for another 5-7 minutes, or until they are tender and have nice grill marks.
- 7
Remove the mushrooms from the grill and drizzle with the balsamic glaze. Sprinkle with grated Parmesan cheese and fresh parsley before serving.
- 8
Serve immediately as a hearty main dish or side.
