BBQ Chicken Quesadillas with Cheddar

Cheesy quesadillas filled with BBQ chicken and melted cheddar, grilled until crispy and served with salsa. Perfect for a crowd!

Ingredients

  • 1 lb chicken breast
  • 1 cup BBQ sauce
  • 2 cups cheddar cheese
  • 6 large tortillas
  • 1 cup salsa
  • 2 tablespoons olive oil
  • 1 bunch green onions
  • 1 medium jalapeño
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper

    Preheat your grill or a large skillet over medium heat (about 350°F).

    In a medium bowl, combine the chicken breast, BBQ sauce, cumin, salt, and black pepper. Make sure the chicken is well-coated.

    Cook the chicken on the preheated grill or skillet for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F).

    Once cooked, remove the chicken from the heat and let it rest for 5 minutes. Then, shred the chicken using two forks.

    In a large mixing bowl, combine the shredded chicken with additional BBQ sauce if desired. Set aside.

    Chop the green onions and jalapeño (remove seeds for less heat, if desired).

    Place a tortilla on a clean surface and sprinkle 1/3 cup of cheddar cheese on one half of the tortilla.

    Add 1/2 cup of the BBQ chicken mixture on top of the cheese, followed by a sprinkle of green onions and jalapeño slices.

    Fold the tortilla in half over the filling, pressing down gently.

    Brush the outside of the quesadilla with olive oil to help it crisp up.

    Carefully place the quesadilla on the grill or skillet and cook for about 3-4 minutes on each side, or until golden brown and the cheese is melted.

    Remove the quesadilla from the heat and let it cool for a minute before slicing into wedges.
