
BBQ Chicken Quarters with Spice Rub

- 4 pieces chicken quarters
- 2 tablespoons smoked paprika
- 1 teaspoon cayenne pepper
- 2 tablespoons brown sugar
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 cup water
- 1 cup BBQ sauce

In a small bowl, combine smoked paprika, cayenne pepper, brown sugar, garlic powder, onion powder, salt, and black pepper to create the spice rub.

Pat the chicken quarters dry with paper towels. Rub the olive oil over the chicken pieces, then generously apply the spice rub to all sides of each quarter, ensuring they are well coated.

In a large resealable plastic bag or a bowl, mix the chicken with apple cider vinegar and water. Marinate in the refrigerator for at least 1 hour, or up to 4 hours for more flavor.

Preheat your grill to medium-high heat (about 400°F). If using a charcoal grill, prepare the coals for direct grilling.

Remove the chicken from the marinade and let excess liquid drip off. Discard the marinade.
