Instructions
- 1
Preheat your oven to 300°F (150°C).
- 2
In a small bowl, mix together smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper.
- 3
Rub the spice mixture evenly over the beef short ribs, ensuring all sides are coated.
- 4
In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side until browned.
- 5
Remove the ribs and set aside. Pour in the beef broth and apple cider vinegar, scraping up any browned bits from the bottom of the pot.
- 6
Return the short ribs to the pot, cover it with a lid, and place it in the preheated oven. Cook for 3 hours until the meat is tender.
- 7
After 3 hours, carefully remove the pot from the oven. Preheat your grill to medium-high heat (about 400°F or 200°C).
- 8
Transfer the short ribs to the grill. Brush generously with BBQ sauce and grill for 5-7 minutes on each side, basting with more sauce until caramelized.
- 9
Once done, remove the ribs from the grill and let them rest for 10 minutes.
- 10
Garnish with chopped fresh parsley before serving. Enjoy your BBQ beef short ribs!
