Bauernpfannkuchen - Farmer's Pancake
A thick, hearty pancake filled with potatoes and bacon, perfect for a filling breakfast.
Ingredients
- 2 medium potatoes
- 6 slices bacon
- 3 large eggs
- 1 cup all-purpose flour
- 1 cup milk
- 1 medium onion
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons butter
- 2 tablespoons fresh parsley

Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Finely chop the onion. Set aside.

In a large skillet, cook the bacon over medium heat until crispy, about 6-8 minutes. Remove the bacon and let it cool on a paper towel, then chop into small pieces.

In a large mixing bowl, beat the eggs. Add the milk, flour, salt, and black pepper. Mix until you have a smooth batter.

Fold in the grated potatoes, chopped bacon, and onions into the batter until well combined.

In the same skillet used for the bacon, add 1 tablespoon of butter and heat over medium heat until melted.

Pour half of the batter into the skillet, spreading it evenly. Cook for about 5-7 minutes, or until the bottom is golden brown.

Carefully flip the pancake using a large spatula and cook for an additional 5-7 minutes on the other side until golden brown and cooked through.

Remove the pancake from the skillet and keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.
